Vinification
Perafita Grenache Noir is marketed in 75Cl and 50Cl bottles. The grapes are harvested by hand in 10Kg boxes. The vinification is made in stainless steel tanks. Cold maceration before fermentation at low temperature. Fermentation with 2 daily rises for 10 days at a controlled temperature. Made 5 months in oak barrels Allier French.
