Red wine made with a cutting Cabernet Sauvignon, Grenache Noir and Merlot.
VINIFICATION
Black Perafita is sold in 75Cl and 5l bottles. The grapes are harvested by hand in 10Kg boxes. The vinification is made in stainless steel tanks. Cold maceration before fermentation at low temperature. Fermentation with 2 daily rises for 10 days at a controlled temperature. Made 11 months in oak barrels Allier French.
TASTING AND GASTRONOMY
Medium layer cherry-coloured wine. Intense and complex aroma with spicy notes derived from aging in barrels and balsamic notes on a background of ripe fruit. It is a dense, wide and well-structured wine, with a fresh acidity and mature tannins. In brief, a balanced wine, long and with a good finish in the mouth.
We can pair it with meat, baked fish, rice or noodles in a casserole, cheeses.
